Sous vide deep fried chicken wings with a delicious crispy crust and incredibly juicy meat inside will make you long for more. It may not taste the same as famous KFC chicken wings, but you'll definitely become a fan of this recipe.

- Whole chicken wings 8 pcs
- Seed oil for frying 850 ml
- Chicken egg 1 piece
- Your favorite hot sauce 1 tbsp
- Dried chili pepper flakes (optional) 1 tsp
- Salt 1 tsp
- Black pepper ½ tsp
- Cayenne pepper (optional) ½ tsp
- Flour 1 cup

Preheat a water bath to 64ºC (147.2ºF).

Put the chicken wings in a bag, season with salt a little (don't oversalt, there will be more salt in a coating). Then vacuumize the bag and immerse it in the preheated water for 2 hours.

When the timer shuts down, pull the wings out of the bag. Don't get rid of the cooking liquid. You can make a sauce out of it or freeze it for a later use. Pat the wings dry with paper towels.

Preheat a seed oil to 180 degrees ºC (356ºF).

While the oil is preheating, break the egg into a bowl (it must be big enough to fit the chicken wing), season it with salt and spices. Then beat lightly. Pour flour into a separate plate.

Roll the wing in flour first, secondly in an egg mixture, then again in flour and dip in hot oil. Don't make more than 2 wings at once. It's better to spend a little more time and fry one wing at a time.

Take out the wings from the a deep fryer and lay them out on paper towels or wipes which will soak in a leftover seed oil.
Your deep fried sous vide chiken wings are done! It's hardly a healthy, but incredibly tasty dish. Bon Appetit!
