Vacuumed pieplant in a strawberry sauce

A rhubarb in a strawberry sous vide sauce can be categerized as a raw food diet meal and it's is a great dessert.

  • Pieplant 1 stalk
  • Strawberry 250 gr
  • Green basil 2 sprigs
  • Grape sugar 1 tbsp
  • Lemon juice
  • Ginger
  • Almond
Method

  • Grind strawberries, grape sugar, basil and a mixture of lemon juice and ginger in a blender.
  • Put the pieplant with the mix in a vacuum bag, immerse it in a container with a sous vide thermostat and set the temperature to 40°C.
  • Cook for 1.5 hours and take out. Chop almonds and use it as a topping for rhubarb.
