Turkey roll-up with Suluguni

It's a magical snack for the New Year and other holidays. A turkey roll-up with cheese cooked ala sous vide will make your guests want this recipe for themselves.

Ingredients

  • Turkey quarter fillet 800 gr
  • Suluguni 150 gr
  • Spice blend (Cardamom, Cinnamon, Ginger, Allspice, Cloves, Nutmeg) 1 tbsp
  • Salt and pepper to your liking

  • Make small cuts in the fillet and fill them with cheese. Then season it with salt, pepper and spices.
  • Roll up the fillet and tie it with a kitchen string.
  • Put a roll in a bag and vacuumize it.
  • Put the roll into a fridge for overnight.
  • Take the bag out of the fridge in the morning. Warm it up and put it in a sous vide water bath preheated to 70 degrees. Set the temperature to 65 and cook for 6 hours.
  • Take out the bag and cool it down in an ice water.
  • When it cooled down, you can shelve it in a freezer or pull the roll out of the bag and serve immediately. Enjoy a juicy and tender roll!
