Recipe for making tender salmon for a romantic dinner with sous vide.

- Salmon fillet 300 gr
- Olive oil 100 gr
- Butter 50 gr
- Coriander seeds 1 pinch
- Salt, pepper
- For serving (optional):
- Sesame seeds 1 tsp
- Thyme, parsley or dill 1 sprig
- Grilled lemon slices

Set the thermostat temperature to 43 ° C.

If necessary, remove the skin from the salmon fillets and all the bones. Cut the fillet into 3 cm wide portions.

Pour oil into a vacuum bag and place the fish pieces. The oil will prevent the pieces from sticking together. Make sure that the oil completely covers the fish. Seal the bag with a vacuum sealer.

Place the fish in a container and set the timer for 35 minutes. Calculate the exact time of cooking with the help of out tables and measurings. After the timer beeps, remove the fish, transfer it to a dry napkin, drain the oil.

Preheat 50 gr. butter in a skillet until brown, add salt. Add a pinch of coriander seeds.

Fry portions of salmon in oil on all sides until golden brown. Place on parchment paper to absorb excess oil.
For serving, use sesame seeds, grilled lemon slices, sea salt (optional), herbs.
