Strawberry blueberry puree

Summer recipe for a delicious strawberry blueberry puree to treat your loved ones.

  • Strawberry cut into 4 pieces 150 gr
  • Fresh blueberry 150 gr
  • Sugar 75 gr
  • Squeezed lemon juice 1 lemon

  • Preheat water with a sous vide thermostat to 82 degress Celsius.
  • Lay out fresh berries in vacuum bags (you can use any other pulp rich fruits).
  • Add sugar, lemon juice to the bags with fruits (a sugar dosage depends on the sweetness of the fruit), then vacuumize the bags.
  • Cook for about 30 minutes, until fruits mellow. Afterwards, it can be used for ice cream or cake topping. If you prefer a thinner consistency, pour the contents into a blender or food processor and blend until smooth puree consistency.
