- Strawberry cut into 4 pieces 150 gr
- Fresh blueberry 150 gr
- Sugar 75 gr
- Squeezed lemon juice 1 lemon

Preheat water with a sous vide thermostat to 82 degress Celsius.

Lay out fresh berries in vacuum bags (you can use any other pulp rich fruits).

Add sugar, lemon juice to the bags with fruits (a sugar dosage depends on the sweetness of the fruit), then vacuumize the bags.

Cook for about 30 minutes, until fruits mellow. Afterwards, it can be used for ice cream or cake topping. If you prefer a thinner consistency, pour the contents into a blender or food processor and blend until smooth puree consistency.
