A mix of spices and sous vide cooking technique can do wonders when it comes to strong drinks. This can be proved by a flavorful and spicy rum which is an equal treat for yourself as well as get-togethers with your friends.
Flavored rum is even tastier when it's homemade. This particular recipe produces rum that comes along great with ice, tonic or soda, and even as part of a cocktail. It contains vanilla, orange zest, cinnamon and a few other spices that will give the rum a sensual and full-bodied flavor.
Ingredients
Serves: –+
- Rum 1.5 liters
- Vanilla bean splitted
- Whole allspice 2 pcs
- Cinnamon ½ sticks
- Black pepper 2 peas
- Sternanis ½ star
- Orange zest 1 tsp
Method
-
Check the temperature in a sous vide water bath. It must be up to 67 degrees.
-
Put all ingredients in a vacuum bag, pump out an excessive air out of and seal it tight. It's not necessary to squeeze all the air out. It is enough to remove most of it.
-
Attach the bag to the side of a sous vide cooker with a clip or press down to the bottom with some dummy weight. Cook for 2 hours.
-
When the sous vide treatment is over, take out the bag and cool it down. To do so, you can put some ice over the bag or simply shelve it in the fridge.
-
Strain the rum to prevent any spices from pouring into a bottle.
-
Add some ice to the glass and pour over the rum. Just like that the drink can already be served to guests or enjoyed by yourself. You can also use the cooked rum as an ingredient in another sous vide cocktail.
