Sous vide smoked chicken

Learn how to make a juicy smoked chicken in a sous vide cooker.

  • Wash and butcher the chicken. Blot it on a napkin. You can unbone it, if you like the chicken that way. After that, rub the chicken with salt, black pepper, and chopped garlic to your liking. Sprinkle liquid smoke all over it.
  • Find a vacuum bag that fits the chicken's size and put it in there. Seal and drain an air from the bag using vacuumizer. Set the timer at 20-30 minutes and adjust sous vide thermostat at 62°C.
  • When it's done, take out the chicken from the bag and cool it down.
    This dish is best served cold. Sprinkle Georgian plum sauce (Tkemali) over the chicken before serving.
