If you love poached fruits and especially pears then you will certainly be interested in this sous vide recipe for saffron flavored pears. Saffron adds a special flavor and makes pears even sweeter. According to the classic recipe of a poached pear you need to poach it in a non-boiling water at a stovetop. Certainly, it means that you'll have to look after a meal all the time while it's cooking. The sous vide cooking method doesn't require you to make such a sacrifice. Just set a timer and calmly do your things around the house. When you return, you'll have a delicious dessert ready. Here's a little tip: pears made that way are best served with an ice cream.
- Peeled pears cut in two 4 pears
- Saffron extract 3 ml
- Sugar powder 100 gr
- Vanilla pod cut in two and slit into thin stripes 1 pod
- White wine 120 ml

Immerse a sous vide thermal regulator into water and let it heat it up to 83 degrees.

Take all the ingredients and vacuumize them either with an at-home vacuum machine or simply seal tightly inside a zipper bag.

Make sure there is no air left in the bag. Leave the bag to pouch in a sous vide cooker for 1 hour.

Take pears out of the bag, cool them down and serve with a couple of spoons of the spicy cooking liquid at the top.
