  • Plum 250 gr
  • Sugar 100 gr
  • Water 50 ml

  • Preheat a sous vide water bath to 70⁰C.
  • Mix water and sugar in a saucepan and simmer over a medium fire until the sugar melts.
  • Cut plums in halves and pit them.
  • Lay out plum halves in a single layer inside a vacuum bag. Add sugar syrup and vacuumize the bag.
  • Immerse the bag in a water bath and cook for 40 minutes.
