Sous vide pineapple in cinnamon and star anise syrup

A pineapple cooked according to this recipe is a perfect sweet course for a dinner. It's tasty and healthy. You can't beat this dessert!

  • Pineapple pulp 400 gr
  • Water 100 ml
  • Sugar 100 gr
  • Cinnamon 1 stick
  • Star anise 1 star

  • It's better to get a pineapple weighing about 1 kilo for this recipe. Peel it and slice off a piece weighing about 400gr (the shape of this slice depends on your imagination only). A leftover piece of the pineapple can be used in another recipe or shelved for a later use. Pour water into a saucepan, add sugar, cinnamon and star anise. Put it on a low heat and cook for 15 minutes stirring occasionally. After that, draw this syrup through a strainer and let it cool down. Put pineapple in a bag, pour some syrup in and vacuumize the bag.
  • Cook the pineapple at 75 degrees for an hour.
  • Cool down the cooked pineapple and slice it into servings. Serve the pineapple just like that or pour the remaining syrup on top. Also, you can garnish it with shortbread crumbs, a scoop of ice cream or a spoonful of yogurt, a mint leaf, and even some dried berries. It will be delicious whatever you choose.
