Once exotic, pineapples are now often used as an ingredient in many desserts. Many articles describe the benefits of this fruit. Some even argue that eating pineapple can help lose weight. While it's yet to be proven right or wrong, there is one thing for sure: pineapple in the herby syrup prepared using a sous vide technology is incredibly juicy and tasty. - Large pineapple 1 piece
- Water 100 ml
- Sugar 100 gr
- Cinnamon 1 stick
- Sternanis 1 star

Set the temperature in a sous vide cooker to 75 degrees Celsius. While it warms up, it's time to prepare the pineapple and syrup for it.

Let's prepare the syrup first because it needs time to cool down. Pour water into a small dipper and add Sternanise, cinnamon and sugar. Set a hotplate on low heat and cook for 15 minutes. Then draw this brew through a strainer and cool down.

Now it's time to get at our fruit. Peel the pineapple and slice it into circles. If you want to leave pineapples's rind, then slice it into semi-circles now or before serving to make it easier to eat.

Put the circles in a bag along with the syrup. Pack the bag with a vacuum sealer. If you don't have at-home vacuum sealer, use a regular ziploc bag. It's good enough for a water bath. Cook a dessert using sous vide technology for an hour.

Take out the bags from the water bath and pull out the pineapple circles. They need to be cooled down. You need to save the syrup for sure – it can be used for serving. Pour it into a separate bowl.

Lay out slices on beautiful plates and pour the syrup over. You can also season the dessert with confectionery sprinkles or vanilla sugar.
