Sous vide peppered cider

Guess the name of a bubbly summer drink that won't give you a hangover. We'll name it to save you the trouble – it's called cider. Classic cider tastes great, but you can make it even better with a sous vide and some spices.

Is there a strong drink that doesn't give you the hangover? Yes, and the French call this drink apple wine or cider. This traditional drink can be made even more exquisite with the help of the sous vide cooking technology. The sous vide peppered cider will satisfy your thirst in summer and cheer you up before a vacation!

Ingredients

  • Cider 2000 ml
  • Cinnamon 1 stick
  • Sugar maple juice 1 tbsp
  • Black pepper ½ tsp
  • Freshly squeezed orange juice 2 tbsp

  • Set the temperature to 60°C in the sous thermal circulator settings. Allow the water to warm up to the required temperature.
  • Pour the wine into one or more vacuum bags and add the rest of the ingredients one by one. It's better to seal the bags with a vacuumizer. If you don't have such a device at hand, use ziploc bags with a fastener. Check a seam for being sealed tightly before immersing the bag in a water bath. Otherwise the contents of the bag may spill out and spoil the whole thing!
  • Immerse the bags gently into a sous vide cooker and leave them poaching for exactly one hour.
  • You can take out the bags after an hour. Take a strainer or clean buttercloth and draw the cider into an easy-to-serve vessel.
  • Collected cider can be drunk without cooling down. If you prefer cool drinks (especially in hot summer), you can put a couple of ice cubes in a glass or chill the wine completely by shelving it in a fridge.

Spicy apple cider has more than one use pattern. It's good as it is and can be used as an ingredient for various strong cocktails, sauces, and even for a sweet dessert filling.
