Sous vide orange infused cocktail

Something beautiful can be created out of the most unusual ingredients. The secret is in the water bath poaching. A sous vide orange infused cocktail is another good example of this.

Cocktails can be made with the most incredible ingredients, like a plain orange infusion. It turns out that sous vide cooking method is able to turn this type of liqueur along with a couple of other ingredients into a flavorful and cheerful strong drink. Try to make a sous vide orange infused cocktail at home and you'll appreciate the rich palette of taste and tipsy flavor of this drink.

  • Wheat vodka 375 ml
  • Vanilla 1 bean
  • Vanilla orange infusion 60 ml
  • Freshly squeezed orange juice 45 ml

  • You can start preparing citrus fruits while a sous vide heat circulator preheats the water to 60 degrees.
  • First, let's peel off the zest. You can do this by hand or with a special fruit peeler. By the way, you can keep the zest for garnishing. The cocktail willll look great with it!
  • Now split the vanilla bean in half. Put these halves together with peeled oranges (you can take it apart for convenience) and vodka in a plastic bag with a fastener and seal tightly. The bag can be immersed into the sous vide cooker and left there for two hours.
  • Take out the bag and cool it down in an ice bath. You can just put the bag in an ice bucket to cool it down faster. Then draw the drink through a strainer into a bottle. Later on glasses will be getting their servings of the cocktail from this exact bottle.
  • Just pouring the drink into glasses is a bit boring. Therefore, we don't fill the glasses with the drink completely (for example, fill it just by ¾) and the rest of the room in the glass will be occupied by the orange juice. The final touch is an orange slice which can be lowered either into the glass itself or put right on the edge of the glass (you'll need to make an appropriate cut in an orange slice for that). If you want bitterness, sprinkle crushed zest on the surface of the drink instead of an orange slice. Don't get carried away with it though! Have a nice party!

This infusion can be kept in a frdige for up to three weeks, so you can make a lot of it safely.
