Sous vide lavender syrup

Have you ever tried a lavender syrup? Apparently, such an incredible syrup can be delicious if you cook it in a sous vide cooker.

Those who love sous vide tend to experiment in a kitchen. This simple recipe will help you make an amazing sous vide lavender syrup. It can be used as an ingredient in many strong or alcohol-free cocktails and even pastries.

  • Pressed lavender flowers 1 tbsp
  • Water 1 glassful
  • Sugar 1 glassful

  • Set your sous vide heater to 57ºC. It takes some time to preheat water to the required temperature. This time will be enough to prepare the lavender for a slow cooking.
  • Take one vacuum bag (a ziploc bag would do as well) and add all the ingredients into it one by one: water, sugar and lavender flowers. Seal the bag tightly by yourself or use a vacuum sealer to make sure the bag is air-proof.
  • Meanwhile, the water has already been warmed up and it remains to immerse the bag in it. Poach it for an hour.
  • The syrup can be removed from a water bath after an hour. Draw it through buttercloth or a strainer into a jug. It's much easier to pour the syrup from the jug to smaller vessels such as jars.
  • Pour the syrup into jars if you have no plans on using the whole batch at once. This way the jars can be kept in a fridge for a long time and the syrup will remain its qualities.

You can drink the syrup as it is. No improvers required as it's incredibly delicious! Another great idea is to mix various cocktails with it. Also, it's perfect as a topping for an extra rich or regular ice cream. Speaking of ice cream, if you stick a popsicle stick in each jar before freezing it, you'll get an excellent lavender ice pop (or sorbet if you prefer the fancier name for this treat). Pie shells are turned out great if you add a little of this wonderful syrup to a dough. As you can see, there are so many options. Don't be afraid of experimenting and everything will work out!
