Home fries seasoned with thyme can beat anything in your regular menu. The simplicity of this recipe allows to get teh desired meal even if you're not a frequent guest in a kitchen. And the sous vide temperature treatment will add an extra flavor to this dish.

- Peeled and sliced potatoes (3mm thick at best) 2 tubers
- Thyme 1 sprig
- Chilled goose fat 2 tbsp
- Salt and pepper
Method

Melt the goose fat, but let it cool down a little bit to prevent a steam from entering a vacuum sealer. Lay out sliced potatoes in a vacuum bag in a single layer and add a little goose fat along with the thyme.

Vacuumize and cook for an hour at 85 – 90°C.

At the end, fry it in a well-heated pan until golden brown.
