Sous vide home fries

Home fries seasoned with thyme can beat anything in your regular menu. The simplicity of this recipe allows to get teh desired meal even if you're not a frequent guest in a kitchen. And the sous vide temperature treatment will add an extra flavor to this dish.

Ingredients

  • Peeled and sliced potatoes (3mm thick at best) 2 tubers
  • Thyme 1 sprig
  • Chilled goose fat 2 tbsp
  • Salt and pepper

  • Melt the goose fat, but let it cool down a little bit to prevent a steam from entering a vacuum sealer. Lay out sliced potatoes in a vacuum bag in a single layer and add a little goose fat along with the thyme.
  • Vacuumize and cook for an hour at 85 – 90°C.
  • At the end, fry it in a well-heated pan until golden brown.
