This is a well-liked cooking recipe of a sous vide ginger cognac.
Ingredients

- Fresh ginger 128 gr
- Your favorite cognac 375 ml
- Sugar 144 gr
- Water 240 ml
Method

Peel and grate the ginger.

Pour cognac into vacuum bag and add ginger to it. Vacuumize the bag to exhaust all air. Immerse the bag into a water bath and cook for about 2 hours at 57C.

When the cooking time is over, sift the cognac and ginger. You may add a syrup to a cocktail. Store in a clean sealed bottle.

To make the syrup, boil water in a separate saucepan on the stove and add sugar to it.
