  • The water bath must preheat the water to 57 degrees Celsius before you immerse bags with brandy in it.
  • While the water is preheating, you will have enough time to peel the ginger. Then it needs to be grated. You can use a grater, but grating takes much longer compared to a food processing with the same results. The finer the ginger is grated, the better.
  • Pour the brandy into a ziploc bag along with the grated ginger. By the way, it's better to use a vacuum sealer and special bags for it. That way you will know for sure that excess air has been pumped out completely from the bag.
  • Immerse the bag into a sous vide cooker and leave it poaching for 2 hours.
  • While our brandy is poaching in the water bath, you can keep yourself busy by preparing the last ingredient for a beverage. That is syrup. It's quite easy to make. You need to pour the water into a small saucepan and wait until it boils. Then just wait until it turns into the syrup by adding sugar and stirring.
  • When the timer goes off, draw the brandy through a strainer to prevent the ginger from pouring into a bottle (the one you decide to store your drink in). After that, brandy needs to be cooled down. It's believed that the delicate flavor of this drink is better revealed when it's chilled.
  • All that remains is to add the syrup. You can pour it directly into the bottle, but the better idea is to mix the brandy with syrup in a glass instead. The reasoning behind this is that tastes differ. Someone would like to add more syrup when another prefers less.
  • If brandy seems stronger than you though it would be, add a few ice cubes to the glass. Melting ice will weaken your brandy to the exact level you need. And, of course, this sous vide ginger brandy with syrup can be used as an ingredient in other cocktails.
