This fish is favorite among those who adhere to a healthy lifestyle and play sports. It's known by a low fat numbers. Dorado also known as Mahi-mahi is a very tender and juicy meat that can be cooked on a grill or fryed in a pan. But it's the best when it cooked in the sous vide style.

- Dorado 1 fillet
- Bulb onion 1 piece
- Lemon 1 piece
- Olive oil
- Salt and pepper

Preheat a sous vide water bath to 60°C. This temperature will be enough to make the fish meat tender and literally melting in your mouth.

If you bought a skin-on fish, scale it and gut it. Mix oil, salt and pepper in a deep bowl. You can also add other spices that suit the fish such as allspice.

Rub the fish in-and-out with the mix of spice and oil. Slice up the lemon and place a couple of them inside the fillet.

The fish can be packed. But first put a whole peeled onion to it. Immerse the bag into the water to poach for 3 hours.

The dorado will be done in three hours. You can take it out of the bag and lay out on a plate immediately.

You can also make a side dish for your dorado. Rice or jacket potatoes will do. Season it with dill and leek and you'll have a real feast!
