- Olive oil 1 tbsp
- Freshly squeezed lemon juice

Before start poaching the fish, your sous vide water bath must have to preheat the water to 55 degrees.

Season the fillet with salt and pepper to your liking. Mix olive oil, lemon juice and lemon zest in a separate bowl. Put all this in a vacuum bag and seal it tight with a vacuumizer. If you don't have such a device at hand, then just pack the fish tightly in a ziploc bag.
