Sous vide classic stodgy eggnog

Eggnog is associated with the most beloved holiday of the year. It will easily brighten up your evening while you decorate the Christmas tree or place  some Christmas decorations around your house. The easiest way to prepare the eggnog drink for a happy get-together crowd is if you have a sous vide cooker on hand. The sous vide water bath cooker maintains the ideal temperature, which means that it perfectly pasteurizes eggs and easily reveals all the spice flavors. The drink will be stodgy like cream flavored with a rich and spicy taste.

Ingredients

  • Chicken eggs 2 pcs
  • Egg yolk 2 pcs
  • Refined sugar 75 gr
  • Ground allspice
  • Ground cloves
  • Chopped nutmeg 1 tsp
  • Heavy whipping cream (more than 30% fat) 500 ml
  • Creamy milk 500 ml
  • Hazelnut syrup 4 ml
  • Vanilla extract 4 ml

  • Pour water into your sous vide cooker and heat it to 60 degrees.
  • Take a deep bowl for eggs, yolks, and sugar. Beat the mixture up until smooth.

    Add remaining ingredients and beat the mixture up again. Avoid foaming!
  • Pour the mixture into a 1 liter bottle and seal tightly with a cork.
  • Check one more time if the bottle is sealed tight just in case. Then put it in the sous vide water bath and set the timer for 1 hour.
  • When the timer goes off, take out the bottle and cool it down. Depending on how fast you want to cool the bottle down you can either put some ice over it or put it right in the fridge.
  • For a shot you'll need a lowball glass (a whiskey glass is the best choice). Pour some bourbon, rum or brandy at the bottom, then pour chilled eggnog over it. Stir lightly and season with freshly ground nutmeg. You can add ice to make the drink only tastier.

Who said that Christmas happens only once a year? The sous vide eggnog drink will bring you a X-mas mood at any time of year.
