A taste of sous vide cinnamon apples is quite similar to regular baked apples. Apples' texture becomes very delicate due to the long cooking time.

- Sour apples 4 pcs
- Unsalted butter 3 tbsp
- Brown sugar 2 tbsp
- Pitted dates 2 pcs
- Raisins 2 tbsp
- Ground cinnamon 2 tablespoons
- Fine sea salt ¼ tsp
- Grated nutmeg ¼ tsp
- Vanilla extract ⅛ tsp
- Whipped cream or ice cream for topping
Method

Place a sous vide circulator in the container and set the temperature to 84ºC.

Carefully clear out the apples' core with a sharp knife leaving everything else intact. Sprinkle apples with lemon juice.

Mix the butter, brown sugar, dates, raisins, cinnamon, salt, nutmeg and vanilla in a medium container to prepare stuffing.

Put stuffed apples in vacuum bags and seal them. Immerse the fruit bags in a sous vide cooker and set the timer for 2 hours.
Serving:
When the cooking time is over, take out the bags from the sous vide container. Carefully take the apples out of vacuum bags and put fruits on serving plates. Apples are best served warm. Decorate them with whipped cream or ice cream before serving.
