Sous vide recipes have something for sweet-tooth people too. Just like these chocolate truffles. It's finger-licking good!

Desserts and healthy food don't go well together, but sometimes you really want to treat yourself with something sweet! This sous vide chocolate truffles recipe is perfect for such an occasion. It's easy to cook, but you'll have to wait a little while they poach in a water bath. It's worth the wait!

  • Dark chocolate (at least 60% of cocoa) 275 gr
  • Sour cream (at least 50% of fat) 100 gr
  • Flower honey 100 gr
  • Freshly squeezed orange juice 25 gr
  • Cinnamon 2 sticks
  • Orange zest

  • As soon as your sous vide cooker heats up the water to 58 degrees, you can immerse a bag full of yummies there. Meanwhile the water is heating, we'll get at preparing the contents for this bag.
  • You don't have to do anything special for the truffle filling. Just put all the ingredients in a bag and seal it tightly to prevvent it from spilling out.
  • Immerse the bag in the bath and leave it there for 4 hours.
  • Take out the bag after 4 hours and draw the contents through a strainer to get the purest filling.
  • If you have a pastry bag at the kitchen, use it to squeeze out truffle scoops. If you don't have such a thing at hand, then just wait for a while until the mixture cools down and roll the balls by yourself.
  • Now wrap the truffles in a plastic wrap and leave them laying still for a day.
  • The truffles are almost ready! What's left is to add some garnishing and here your imagination can run wild. It would be nice to melt some chocolate leftovers, dip each truffle in it and then roll in cocoa or coconut. This variant isn't the only one out there, you can come up with your own idea!
