Sous vide candied balsamic strawberries

A frosty ice cream or delicate yoghurt are even tastier when topped with sous vide candied balsamic strawberries.

Despite its simplicity, this dessert looks really sophisticated. Unlike most other desserts, this one has only four ingredients. When it's ready, you can eat it straight away or as an icing to the ice cream, use it as a cheesecake topping or add it on top of vanilla yoghurt just like we did.

  • Sliced strawberries 200 gr
  • Sugar powder 4 tbsp
  • Balsamic vinegar 2 tsp
  • Lemon juice 2 tsp

  • To follow along the steps of this recipe, you need to preheat water to 84 degrees Celsius. Your sous vide heater will do the job on its own while you prepare the strawberries for a water bath.
  • Mix the vinegar, powder, and lemon juice in a medium cup. When it's mixed smooth, add sliced strawberries and stir gently.
  • Put strawberries in a ziplock bag and immerse it into water. Strawberries don't need to pouch for too long. 15 minutes are good enough.
  • When a timer alarm sets off, take out strawberries, cool them down and start eating.

You can use this dessert as an icing for a cake, yoghurt or ice cream if you like.
