Method

  • Cut the beef into pieces, salt and pepper, put everything in a bag, add a few slices of butter and vacuum the bag.
  • Immerse the bag in a water bath heated to 58 degrees and cook for 2 hours.
  • After the time is up, cool the bag with meat quickly in cold water.
  • Put in a preheated pan with vegetable oil, fry until golden brown, add onions, carrots, fry, sprinkle with flour, add water, prunes, previously soaked in water, and all the spices. Simmer for 30-40 minutes.
