It's yet another sous vide beef steak recipe that is worth to be shared with you.

  • Beef top sirloin (5cm thick ideally) 700 gr
  • Butter 220 gr
  • Sea salt
  • Garlic
  • Hot mustard
  • Peppercorns
  • Herb mix

  • Beat the meat lightly. Season it with salt and pepper. Add garlic.
  • Put the beef in a vacuum bag and vacuumize it. Immerse the bag in a water container with a sous vide thermostat. Choose the cooking temperature between 50 and 60°C. Leave it poaching for about 8 hours.
  • Make a sauce 15 minutes before the meat is completely cooked. Here's what you need to do for it. Add butter with herbs, mustard, garlic and pepper in a container and mix everything well. Pour the sauce over the meat.

Note that fillets made in a sous vide cooker are very effective at soaking herbs, garlic and other spices. Therefore, add lesser seasonings to the beef in comparison with regular boilng or frying.
