Ingredients
- Vodka 400 ml
- Bacon 200 gr
- Bacon grease 8 tbsp

Take the sous vide cooker, pour enough water in, adjust the sous vide immersion thermostat and set the temperature to 65.5 degrees.

While the water is warming up, heat the oven to 200 degrees. Once the oven is hot, place the bacon in the baking sheet and bake for about 16 minutes until crispy. Then remove it from the oven and cool it down leaving for a couple of minutes away from the oven.

Vacuumize all the ingredients. If you do not have a vacuumizer, you can use a regular vacuum bag. To prevent the bag from floating, put some kind of a dummy weight in it. For example, a stainless steel spoon would work. Just make sure it is heavy enough.

Now immerse the bag into the cooker with a preheated water and note down the time of 45 minutes. During this time, the sous vide cooking technology will pouch your cocktail until it's done.

Strain the liqueur into a bowl or large measuring glass.

Shelve the infused vodka in the fridge and leave it there until a thick layer of grease forms on the surface.

Try to remove all the grease from the surface. No worries if you've missed some spots. The remaining grease will be trapped by a buttercloth or any similar fabric while you'll be straining the drink the next time. While straining once again, choose an appropriate container which will be the best for both storing and serving.
