  • To prepare the brine, mix liter of water and 4 tablespoons of salt
  • Soak pork fillet in brine for 2 hours, then divide into portions, blot with paper towel, then season with salt and pepper.
  • Place everything in a bag, then add butter and vaccume.
  • Cook for 2 hours at 60 degrees.
  • After the cooking time is up, quickly cool the meat in ice water, then remove from the bag.
  • Fry the medallions on the grill and in a well-heated frying pan until crisp.
  • In a skillet over low heat, bring the cream to a boil while gradually stirring, then add small pieces of cheese, salt, pepper and cook until the cheese dissolves.
