- Pork fillet 500 gr
- Butter
- Salt, pepper
- Sauce:
- Dor blue cheese
- Cream
- Salt, pepper
Method

To prepare the brine, mix liter of water and 4 tablespoons of salt

Soak pork fillet in brine for 2 hours, then divide into portions, blot with paper towel, then season with salt and pepper.

Place everything in a bag, then add butter and vaccume.

Cook for 2 hours at 60 degrees.

After the cooking time is up, quickly cool the meat in ice water, then remove from the bag.

Fry the medallions on the grill and in a well-heated frying pan until crisp.

In a skillet over low heat, bring the cream to a boil while gradually stirring, then add small pieces of cheese, salt, pepper and cook until the cheese dissolves.
