Ingredients

  • Loin with ribs 1.5 kg
  • Salt
  • Bay leaf
  • Black pepper
  • Garlic 2 cloves
Method

  • Cut the loin into two equal portions, rub it with salt and pepper, put everything in bag, add garlic and bay leaf and then vacuum the bag.
  • Refrigerate for 2 days.
  • Cook in a water bath at 65 degrees for 3.5 hours.
  • After cooking, immediately cool in ice water, remove from the bag, wrap in foil and put in the refrigerator for a couple of hours. Grill before serving.
