Plums have a tart taste which can be a little unpleasant when the fruit if sresh. However, this astringency softens when the fruit is cooked with sugar. For best results, try making plum sous vide. Traditional cooking methods, such as stewing, just will make any fruit mushy. A low temperature is used during sous vide cooking maintains the fruit's shape and texture.

- Plum 250 gr
- Sugar 100 gr
- Water 50 ml
Method

Heat the sous vide water bath to 70⁰C.

Combine water and sugar in a saucepan and simmer until the sugar dissolves.

Cut the plums, separate from the seeds.

Place the halves in one layer in a bag. Add sugar syrup and vacuum the bag.

Place the bag in a water bath and leave it to cook for 40 minutes.
