Pickled mushrooms made according to a sous vide technology can turn into a delicious appetizer or serve as the basis for many salads. Adding herbs and flavorful spices in a mix gives a unique and delicate taste to this dish.

Ingredients

  • White mushrooms 280 gr
  • Olive oil 45 ml
  • Dry white wine 30 ml
  • Dried thyme ½ tsp
  • Worcestershire sauce 1 tsp
  • Bay leaf 1 piece
  • Lemon zest 1 strip
  • Dried ground garlic
  • Salt and pepper

  • Preheat the water with a sous vide thermostat to 85ºC.
  • Put the mushrooms in a bag and add a small amount of olive oil so that the spices rubs the mushrooms better.

    Add wine, thyme, bay leaf, Worcestershire sauce, dried garlic, lemon zest and pepper. Mix the mushrooms with these spices by tossing them inside the bag. After that, pump out the air and seal the bag tightly.
  • Immerse to the water bath for 60 minutes.

    When the cooking time is over, take it out and cool it down. You may leave the mushrooms in the bag while they cools down.
