  • Pesto ingredients:
  • Fresh basil leaves 2 cups
  • Toasted pine nuts ¼ cup
  • Garlic 2 cloves
  • Grated Pecorino cheese 1.5 cup
  • Olive oil 1.5 cup

  • Preheat a sous vide water bath to 60°C.
  • Season chicken breasts with salt and pepper.
  • Seal chicken breasts in a bag and pump out the air with a vacuum sealer.
  • Put the breasts in a water bath for 60 minutes.
  • Blend garlic, pine nuts and basil in a blender.
