Mulled wine

A sous vide recipe for mull wine for strong drinks devotees.

Ingredients

  • Sweet red wine 1 liter
  • Cinnamon 2 sticks
  • Cloves 1 tbsp
  • Fragrant spices 1 tbsp
  • Peeled and segmented orange 1 piece
  • Peeled and segmented lemon 1 piece
  • Brown sugar 4 tbsp
  • Grated nutmeg 1 pinch

  • Put the sugar in a saucepan, add the rest of the ingredients, and pouch until sugar dissolves in the wine and spices.
  • Remove from heat and cool it down. Then distribute it along vacuum bags pouring just enough to be able to drain an air from each bag. Cook for 1 or 2 hours at 85 degrees.
  • Draw after it's done.
  • Serve immediately or keep it in fridge. This drink is served warm only. Use cinnamon sticks for garnishing.
