Let's prepare a strong version of a lemon cordial from the Meyer lemon juice.
Meyer lemons belong to the genus citrus. These are the result of a natural hybridization of pomelo, mandarin and citron. The taste of these fruits is something between a lemon and an orange. Lemons ripen from November to March and lemon cordial is a favorite way to enjoy their fresh taste. Meyer lemon liqueur is a strong and sweet drink that is ideal as an after dinner cocktail or digestve. There are several ways to serve cordial. It can be served unchilled, chilled, on the rocks or mixed with a soda.

- Vodka 1 cup
- Sugar 1 cup
- Freshly squeezed lemon juice 1 cup
- Meyer lemon zest 3 lemons

Mix all ingredients in a large zip lock bag. Close the bag gradually immersing it in a water bath preheated to 57ºC (135°F). Set the timer to 2 hours. In the middle of the process, stir the contents of the package to make sure that the sugar dissolves.

When the timer goes off, take the bag out from the water bath. Strain the contents through a fine strainer right into a large bowl. Pour into a random vessel you've chosen as a storage unit and chill in a fridge overnight before drinking.
