Sausages are juicier and more delicious when they're cooked under a sous vide thermal treatment other than just grilled or simply fried.
Italian sausages with fresh grapes and rosemary are incredibly easy to prepare. All you need is sausages, grapes, rosemary and a small amount of butter. All ingredients are cooked together to be able to mix the flavors well. Add a little amount of a balsamic vinegar to the grapes before serving. It emphasizes its taste and adds savory sweet as well as sour notes.
Serve with crispy bread and green salad or sautéed greens. A cabbage or a silverbeet are great options too. A glass of good red wine will be a good addition to the dish. What could be better than that?
- Red seedless grapes 2.5 cups
- Fresh rosemary 1 tbsp
- Butter 2 tbsp
- Italian sausages 4 pcs
- Balsamic vinegar 2 tbsp
- Salt and pepper

Set your sous vide thermostat to 71ºC (160ºF).

Put sausages, grapes, rosemary and butter in a sous vide bag.
It's better to separate ingredients by layers to prevent grapes from interferring with sausages when vacuum cooked. -
Vacuumize the bag in a preferable way. When the water got preheated to the required temperature, immerse the bag in a sous vide water bath for one hour.

When the timer goes off, take out the sausages from the bag. Put the grapes and the cooking liquid from the bag in a small saucepan. Pour the balsamic vinegar in and cook for about three minutes over a medium heat.

Grill the sausages or fry in a very hot cast-iron pan until golden brown. Serve sausages along with grapes.
