Green onion sous vide soup

Recipe for making green onion soup in sous vide.

  • Green onions 1 bunch
  • Potatoes 1 pc
  • Garlic 2 cloves
  • Soy sauce 1 tsp
  • Olive oil 1 tsp
  • Salt, pepper
  • Low-fat cream or water 240 ml

  • Pour water into a container and heat it with an immersion thermostat up to 82 degrees.
  • Peel and dice the potatoes, chop the onion and garlic. We put all the ingredients, except for water (cream) in a bag and vacuum.
  • Dip in water and cook in sous vide for about an hour.
  • Transfer the prepared vegetables to a bowl and gradually add water or cream to knead until the required consistency of puree soup. Add olive oil and garnish with fresh parsley.
