Sous vide technology of cooking False hare.
Ingredients

- Ground pork and beef (50/50 ratio) 2.2 lb
- Bread 4 pieces
- Carrot 1
- Onion 1
- Celery stalk 1
- Chicken eggs 5
- Ground smoked sausages (Cabanossi) 5
- Milk 250 ml
- Water 250 ml
- Pickled cucumbeumrs (to taste)
- Herbs and spices (to taste)
Method

Slice the crust off of bread, cut the rest into pieces and pour milk over it.

Blend together a carrot, an onion, a сelery stalk and softened bread.
Pour milk into this mix.
Add 3 eggs and stir while adding in the cold water. -
Thoroughly mix the ground meats (to be sure, you may blend it as well) with the sausages (Cabanossi) and leave it for about an hour to infuse.
Cut pickled cucumbeumrs into strips. -
Lay out the ground meat in a rectangular aluminum mould (you can use a plastic one as well). Place the sliced cucumbers on the ground meat layer, then add another layer of ground meat, then another one with eggs.

Put it in a vacuum pack and cook it for 5 hours by sous vide method at 75°C (167°F). And that's it, the False hare is ready.
