Set the water bath temperature to 88 degrees.

Peel the asparagus, start at the top and work your way to the bottom.

Peel the carrots and cut them along in half.

Pack the vegetables in separate bags with a little olive oil. Seal the bags with a vacuum sealer.

Set the timer on the thermostat for 10 minutes. Place the carrots in a gastronorm container. Wait for 6 minutes and then place the asparagus.

After the time is up, unpack the bag of vegetables, add salt and pepper. Serve them as a side dish or as a stand-alone meal. Asparagus, if desired, can be mashed, vegetables can be caramelized. You can also quickly cook Asian-style vegetables with sesame seeds, ginger and soy sauce.
This is one of the recipes that allows you to combine vegetables of different structure in the same cooking temperature mode, you just experiment with the time interval.
