A sous vide cooking technology allows you to cook a delicious pork tenderloin quickly and with a minimal effort. This tenderloin doesn't have a fatty layer therefore can be considered as a healthy food.
The pork tenderloin cooked using the sous vide method will delight you with delicious, juicy and tender meat. You can serve it with mashed vegetables dribbling an olive oil over the dish first.

- Pork tenderloin 1 piece
- Salt 5 tbsp
- Sugar 2 tbsp
- Parsley 30 gr
- Scallions 30 gr
- Garlic 2 gr
- Shallot 10 gr
- Olive oil 150 gr
- Chili pepper 5 gr
Method

Preheat a sous vide cooker to 58°C.

Season the meat with well by mixing salt and sugar in a 5 to 2 ratio before putting the pork in a bag. A curing mix makes up about 1.5% of the tenderloin weight.

Seal the bag using a vacuum sealer by pumping out the air.

Put the bag in a water bath for an hour and a half. While the tenderloin is cooking, take care of a side dish or treat yourself to a glass of wine.

Now it's time to prepare a herbal oil. Mix finely chopped herbs and spices with the olive oil.

When a thermostat alerts you on the end of the procedure, it means the delicious pork tenderloin is done. You can serve it as it is or fry it in a pan on every side for 30 seconds. Dribble the herbal oil over the tenderloin and enjoy its amazing taste!
