- Olive oil
- Fresh greens (sage will be the best choice)
- Salt

Preheat water to 63 degrees using a sous vide thermostat. It'll take 3 hours to cook a delicious turkey breast.

Fry the turkey in a red-hot pan with vegetable oil before vacuumizing it in a bag. Fry the turkey skin twice (once at the beginning and once at the end of cooking) to get all the flavor out of it. It's ok if the turkey you bought is skinned. Fry it anyway. The first roasting isn't for crispy crust, but for an appetizing brownish shade.
It's very important how heated the pan is. Press the breast to roast it evenly. Fry for a couple of minutes to get desired results.

Mix sugar and salt in a 2:5 ratio. Spread this mixture all over the turkey breast. Put the breast in a bag along with your favorite spices (this is optional), greens and certainly oil. Pump out the air from the bag with a vacuum sealer and immerse the turkey in a water bath for at least 3 hours.

Take out the breast from the bath by the end of cooking time and pat it dry with paper towels. Preheat the pan again to fry the breast in a mixture of olive oil and butter. Make sure to lay it skin side down. Fry for no more than 2 minutes. You can pour the scorching oil over the sides and top while roasting it.

Remove the pan from a hotplate. Cut the delicious breast into slices and garnish it with the greens you've prepared beforehand. The dish is done.
