- Sage
- Salt
- Pepper
- Butter
Method

Rub the quail drumsticks with salt and black pepper, add sage leaves and a piece of cold butter.

Put them in a bag and vacuumize it.

Cook in water preheated to 60 degrees for 2 or up to 8 hours (tenderness of the meat depends on the chosen cooking time).

Pat cooked drumsticks with a paper towel and quickly fry adding butter until crispy brown.

Serve with mashed potatoes garnishing a plate with a balsamic glaze.
