Sous vide quail drumsticks with sage

If you want to surprise your guests, cook quail drumsticks with sage for a snack. The sous vide cooking method will greatly simplify this task for you.

  • Sage
  • Salt
  • Pepper
  • Butter

  • Rub the quail drumsticks with salt and black pepper, add sage leaves and a piece of cold butter.
  • Put them in a bag and vacuumize it.
  • Cook in water preheated to 60 degrees for 2 or up to 8 hours (tenderness of the meat depends on the chosen cooking time).
  • Pat cooked drumsticks with a paper towel and quickly fry adding butter until crispy brown.
  • Serve with mashed potatoes garnishing a plate with a balsamic glaze.
