A homemade melon gin and tonic cocktail with a sous vide treatment. This is a treat for yourself and your guests.

- Melon 250 gr
- Melon balls (for garnishing)
- Sugar 30 gr
- Water 30 ml
- Gin 150 ml
- Tonic 300 ml
- Ice cubes
Method

Heat the water bath to 47⁰C using a sous vide thermal processor.
Cut the melon and put it in a vacuum bag. Add gin and vacuumize it.

Immerse the bag with its contents in a sous vide container with preheated water and leave it there for 2 hours at the set temperature.
As soon as the cooking time is over, take out the bag and let all the ingredients cool down. Then draw the drink.

Put ice cubes in glasses, pour melon gin over, fill with tonic and place a few thyme sprigs. Cocktails can be decorated with skewered melon balls.
