  • Heavy cream 2 cups
  • Sugar ¼ glass
  • Egg yolk 4 pcs
  • Vanilla extract 1 tsp

  • Set the temperature on the SousVide thermostat to 82C and while cooking the ingredients, let our water bath heat up.
  • Whisk together the cream, egg yolks, sugar and vanilla in a medium size bowl. Pour the prepared mixture into glass jars with a tight lid, and then carefully place the jars in a bath of water and set a timer for 30 minutes.
  • After half an hour and a “squick” from a timer, remove the cans from the hot water. Please take precautions – we used long-handled tongs.
  • Dip the dessert in cold water and leave it to cool. As soon as the jars are cooled to a room temperature, move them to the refrigerator for a couple of hours.
  • Take the jars out of the refrigerator, open and make sure that the crème brulee has become similar in consistency to very thick sour cream. Sprinkle brown sugar over the top and caramelize the sugar using a burner with a high flame until a hard, slightly burnt-looking crust forms.

Serve the dish as quickly as possible until the crust absorbs moisture and loses its crust!
